Been In a tropical mood since my Hawaiian party last weekend, so decided to carry over the flavours of Coconut & Pineapple into this weeks recipe.
Swiss roll filled with my homemade  Pineapple jam/pina colada jam topped with a Coconut whipped cream and freshly grated coconut delicious!
I also had some fresh coconut left from the party so grated it all up and froze in small bags in the freezer, perfect for topping desserts like in this case. The Coconut cream was not sweet but worked well with the roll Pineapple jam filling and had a cool refreshing taste.
